Fish Cakes

This recipe was an overwhelming hit with my kids. It was from a cookbook we loved, called Dinner, A Love Story. It was half memoir, half cookbook and shared how their family navigated family meals. This is the cookbook that gave me the idea for Dinner Deconstructed.
The recipe is similar to a crab cake but calls for a mild fish and using a potato as the carb. The texture was even throughout, and Mikey loved them.

We never had leftovers when I made this dinner. Awesome. If you think your kiddos might just go for this, I have linked the recipe below. We didn’t make the dipping sauce – I’m ambitious but not crazy. Mikey is 100% categorically opposed to condiments of any kind (and the rest of my family likes their familiar remoulade or a squeeze of lemon). I’m so happy she had posted this recipe because I do think it is delicious and comforting…happy eating!
