Carrot Zucchini Muffins

Neither of my boys were big zucchini fans, but they loved pumpkin bread.  The flavor of this carrot-zucchini muffin recipe is quite similar to pumpkin bread, so they agreed to give it a try.  I’m sure the pirate aprons (a gift from my mom) didn’t hurt either.

I liked this because it wasn’t like I was trying to hide the zucchini from them (although I’m not above that).  I was just asking them to try a way to prepare it that they might like.  

These muffins weren’t a favorite, but they ate them…probably with some butter and cinnamon sugar.  They would also be delicious with cream cheese.
